Daily Recipe

Daily Recipe
I have very fond memories of my father making these homemade french fries for us kids when we up late and night. They are healthy and a fun snack. Eat away!

Ingredients

* 1 large baking potato
* 1 tablespoon olive oil
* 1/2 teaspoon paprika
* 1/2 teaspoon garlic powder
* 1/2 teaspoon chili powder
* 1/2 teaspoon onion powder

Directions

1. Preheat oven to 450 degrees F (230 degrees C).
2. Cut potato into wedges. Mix olive oil, paprika, garlic powder, chili powder and onion powder together. Coat potatoes with oil/spice mixture and place on a baking sheet.
3. Bake for 45 minutes in preheated oven.

Where are you from:
I'm from London, UK, I live with my man and cat, one prefers the mess my crafting makes more than the other!!!

How did you get started with your cupcake craft:
I started knitting when my friend asked me to knit some cakes as promotional items for her business (www.timefortease.co.uk); they were such a hit with so many people asking for ckes that I started a little industry! My objective was in 2009, to raise enough money to pay for a fabulous 40th birthday party in December. It'd be a great year and the result was a party with lots of real cakes and champagne.

Your favorite part of your business:
The most enjoyable aspect of my craft is when I get returning customers, or when someone writes telling me how much they love their cake!

Any words of advice:
My advice? If you don't enjoy then don't do it! Crafting is about fun for me, so it's important to really find the whole project relaxing, enjoyable and fun!

In honor of valentines I feel the need to share the recipe I will be making my hunny.

White Chocolate Raspberry Cheesecake

Ingredients

  • 1 cup chocolate cookie crumbs
  • 3 tablespoons white sugar
  • 1/4 cup butter, melted
  • 1 (10 ounce) package frozen raspberries
  • 2 tablespoons white sugar
  • 2 teaspoons cornstarch
  • 1/2 cup water
  • 2 cups white chocolate chips
  • 1/2 cup half-and-half cream
  • 3 (8 ounce) packages cream cheese, softened
  • 1/2 cup white sugar
  • 3 eggs
  • 1 teaspoon vanilla extract

Directions

  1. In a medium bowl, mix together cookie crumbs, 3 tablespoons sugar, and melted butter. Press mixture into the bottom of a 9 inch springform pan.
  2. In a saucepan, combine raspberries, 2 tablespoons sugar, cornstarch, and water. Bring to boil, and continue boiling 5 minutes, or until sauce is thick. Strain sauce through a mesh strainer to remove seeds.
  3. Preheat oven to 325 degrees F (165 degrees C). In a metal bowl over a pan of simmering water, melt white chocolate chips with half-and-half, stirring occasionally until smooth.
  4. In a large bowl, mix together cream cheese and 1/2 cup sugar until smooth. Beat in eggs one at a time. Blend in vanilla and melted white chocolate. Pour half of batter over crust. Spoon 3 tablespoons raspberry sauce over batter. Pour remaining cheesecake batter into pan, and again spoon 3 tablespoons raspberry sauce over the top. Swirl batter with the tip of a knife to create a marbled effect.
  5. Bake for 55 to 60 minutes, or until filling is set. Cool, cover with plastic wrap, and refrigerate for 8 hours before removing from pan. Serve with remaining raspberry sauce.

Crispy Rosemary Chicken and Fries

Made this dish the other night and it was delish! It was very simple and my super picky boyfriend loved it. The only thing I did different is I added zucchini and carrots when I baked it.

Ingredients

  • 8 chicken thighs
  • 6 small red potatoes, quartered
  • 1/2 cup extra-virgin olive oil, or as needed
  • 1 tablespoon chopped fresh rosemary
  • 1 1/2 teaspoons chopped fresh oregano
  • 1 1/2 teaspoons garlic powder
  • salt and pepper to taste

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Place chicken and potatoes into a large bowl. Pour olive oil over them, and stir to coat. Scatter the chicken and potato pieces in a large baking dish, or cookie sheet with sides. Sprinkle with rosemary, oregano, garlic powder, salt and pepper.
  3. Bake for 1 hour in the preheated oven, uncovered. Baste during the last 15 minutes for extra crispness.

Recipe - Beef Stew

I love to cook but lately I've been so super massively busy that its taken a backseat. So, I busted out the crockpot and I feel like sharing recipes with you that I've tried and liked. (With a few added changes)

Ingredients

* 2 pounds beef stew meat, cut into 1 inch cubes
* 1/4 cup all-purpose flour
* 1/2 teaspoon salt ( I used about 1 1/2 teaspoons)
* 1/2 teaspoon ground black pepper
* 1 clove garlic, minced (I used two cloves)
* 1 bay leaf
* 1 teaspoon paprika
* 1 teaspoon Worcestershire sauce
* 1 onion, chopped
* 1 1/2 cups beef broth
* 3 potatoes, diced
* 4 carrots, sliced
* 1 stalk celery, chopped


Directions

1. Place meat in slow cooker. In a small bowl mix together the flour, salt, and pepper; pour over meat, and stir to coat meat with flour mixture. Stir in the garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots, and celery.
2. Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.
